Eating wild foods means looking to food sources that haven’t been tampered with much over the course of human history. They range from ocean foods such as fish, shellfish, and seaweed—because we haven’t harnessed and changed entire oceans quite yet, those foods retain their original mineral-rich benefits—to such foraged foods as nettles, dandelion, and mushrooms. Wild foods are also those with ingredients humans don’t totally control, such as grass-fed beef from cows who are allowed to choose what they eat, and fermented foods, whose beneficial bacteria grow and thrive without our intervention.

Although the list is miles long and there are runners-up like wild mushrooms and roots, I’ve narrowed the world of wild foods down to seven “miracles.” They’re not miracles in the sense that they can cure cancer or stop painful inflammation the second you swallow them. They’re miracles because they still provide all the nutrition food is inherently supposed to contain. And when we get good nutrition, the scary things—the cancers, the inflammation—often aren’t as villainous. Food has the power to heal in ways medicine never will. Once you understand how certain foods can expand your nutritional repertoire (and generate a little creativity in the kitchen, to boot), I’ll move on to the real miracle: the human body.
